1 large head romaine lettuce, leaves torn into bite-size pieces
3 celery ribs, coarsely chopped
1 red onion, finely chopped
1 1/2 cups frozen peas, thawed
8 ozs. sharp cheddar cheese, shredded
6 - 8 slices of bacon, fried crisp and crumbled
5 large hard-boiled eggs, peeled and coarsely chopped
3 tablespoons sugar
salt and black pepper to taste
1 1/2 cups Hellman's mayonnaise

In a medium-sizie glass bowl (punch bowl is perfect) layer seperately the lettuce, celery, red onion, thawed peas, cheese, bacon, and chopped eggs. Cover with plastic wrap and chill overnight. Mix the mayonnaise with salt, pepper and sugar. Spread the mayonnaise mixture over salad greens and put on buffet table. Toss right before serving.
