3/4 c. chopped walnuts
1 c. chopped dates or raisins
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. applesauce
3 T. oil
1 1/2 c. flour
1 c. sugar
2 eggs
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350ºF. In a large mixing bowl, mix nuts, dates, baking soda, salt, applesauce, and oil, and let stand for 20 minutes. Add the flour, sugar, eggs and vanilla and mix well. Pour batter into 9 X 5 inch loaf pan. Bake for 1 hour or until toothpick comes out clean. Cool for 10 minutes in pan, then remove and let cool completely on a wire rack.
