1 medium head romaine lettuce
1 cup halved cherry tomatoes
1 shallot finely chopped
½ cup Parmesan cheese
Jar Caesar Salad Dressing
3 T olive oil
4 thinly cut slices French baguette, cut on the diagonal
Salt and freshly ground black pepper

Directions:
Remove any loose or broken leaves from outside of romaine. Cut romaine in half lengthwise leaving the leaves attached to the core. Lightly brush each cut side of romaine and bread slices with olive oil.
Heat grill to medium high and clean grill grates. Put romaine on grill cut side down. Do not close grill lid. After 30 seconds, check for grill marks on the romaine; there should be some color. Grill longer if needed. Turn romaine and grill another minute or so. Romaine will be wilted on the outside and crisp inside. Remove from grill. Turn bread once and remove from grill as soon as light grill marks ppear. Lightly brush each side of romaine and bread slices with dressing. Spread Parmesan cheese onto a plate and dip cut side of lettuce into cheese and set aside. Place romaine halves on individual plates, cut side up. Add tomatoes and shallots to top of romaine and finish with drizzle of Caesar Dressing. Garnish with bread slices. Add salt and
pepper to taste.
