Tuna Vegetable Pot Pie Recipe

½ C. raw carrot
1 C. raw potato
3 T onion
1 C. can or frozen green peas
1 C. can corn
2 T butter
1 7oz can tuna in oil
2 T flour
milk
½ t salt
dash pepper.

Directions:
Directions:
Dice and simmer 15 minutes in 1 C salted water(½ t): (carrot, raw potato, and onion)
Add and simmer for 5 minutes: (peas, corn)
Drain reserving liquid.
Melt in sauce pan: (2 T butter)
Add: (oil from 1 can tuna)
Stir in: (2 T flour)
Add: 2 C liquid (the vegetable juice plus milk to make 2 cups.)
½ t salt, dash pepper.

Cook until thickened, stirring constantly. Add vegetables and 1 7-oz. can tuna. Pour into pie crust, top with crust, and bake at 450’ for 25-30 minutes
