2 lb. red potatoes
6 T red wine vinegar
1 shallot (or 1/2 onion), minced
2 T fresh parsley, minced
1 T whole-grain mustard (any spicy mustard is good)
1 T fresh dill, minced
salt and ground black pepper to taste
6 T olive oil

Cut potatoes into bite size pieces and bring to a boil in a large pot with enough salted, cold water to cover. Reduce heat and simmer, uncovered, until the potatoes are tender when pierced with a fork, approximately 15 minutes. Drain and place in medium bowl while still warm.

Whisk together in a small bowl, red wine vinegar, shallot, parsley, mustard, dill, salt and pepper. Add olive oil in a slow, steady stream, whisking constantly.

Pour dressing over potatoes, toss gently to combine. Serve warm, at room temperature or chilled.
