2 TBSP BUTTER
1 CUP CHICKEN BROTH
2 CANS CREAM OF MUSHROOM OR
CHICKEN SOUP
4 TBSP SOY SAUCE
4 CUP COOKED RICE
1 BONED CHICKEN OR ALL
CHICKEN BREASTS
CHOW MEIN NOODLES & CASHEWS

SAUTE FIRST THREE INGREDIENTS. ADD NEXT THREE INGREDIENTS; MIX AND SIMMER FOR FIVE MINUTES. SPRAY 9 X 13 INCH PAN OR CASSEROLE. PLACE COOKED RICE IN CASSEROLE. SPREAD BONED CHICKEN OVER RICE. POUR SOUP MIXTURE OVER CHICKEN AND RICE. BAKE ABOUT TWENTY MINUTES AT 350. SPRINKLE CASHEWS AND CHOW MEIN NOODLES ON TOP. BAKE ANOTHER FIVE MINUTES. SERVE WITH ADDED SOY SAUCE, IF DESIRED.
