2 3-4 pound young frying chickens cut up
2 -3 cups of flour
1 Tsp of garlic salt
1 tsp of paprika
1 tsp of pepper
2 cups of ice
Water to cover
1 Tsp of salt

Crisco solid shortening for frying
Large Iron skillet

Directions:
Directions:
Wash and cut up firers. Place chicken pieces in a large bowl and just cover with cold water. Add the Tsp of salt and cover the chicken with Ice, and let stand for 1 hour. Remove chicken and drain, rinse and place on a towel to drain. Mix the flour, garlic salt, pepper and paprika and mix well. Dredge the pieces of chicken in the seasoned flour and place them on a cookie sheet, making sure that you sprinkle each layer with flour. Place in refrigerator until ready to fry. ( at least one hour) Melt Crisco in iron skillet, you will want about an inch of shortening in the pan. Heat until oil is about 300º,
carefully place the pieces in the pan, do not to crowd the chicken pieces. Cook until the pieces are golden brown and turn each piece and cook until chicken is golden brown on both sides and is 180º internal temp. near the bone. Remove from skillet and drain on paper towel.
