11 egg yolks (1 c.)
1/2 c. boiling water
1 c. sugar
1 1/2 c. sifted cake flour
1 1/2 t. baking powder
1/4 t. salt
1 t. lemon extract
1 t. vanilla extract

1 c. jelly or jam (recommend raspberry freezer jam)
Powdered sugar

Heat oven to 350. Line jelly roll pan, 15 1/2 X 10 1/2 X 1 inch, with waxed paper. In big bowl, beak egg yolks slightly. Add boiling water and beat for 8 minutes. Slowly add sugar and beat well (TIP: cover mixer with towel to prevent splattering). Sift flour once, then measure. Sift all dry ingredients 2 more times. Fold in gently to egg mixture. Pour into pan. Bake for 20 minutes. Immediately loosen cake from edges of pan; invert on towel generously sprinkled with powdered sugar. Carefully remove waxed paper. Trim off stiff edges or cake, if necessary. While hot, carefully roll cake and towel from narrow end. Cool on wire rack for 10 minutes. Unroll cake; remove towel. Beat jelly slightly with fork to soften; spread over cake. Roll up cake; sprinkle with powdered sugar.

This is a great cake to make after you've made Grandma Mac's angel food cake because it uses so many egg yolks. My grandmother (Nora McFarland) loved jelly roll cake.
