2 cups of ciabatta sponge
8 cups of bread flour
3 1/4 cups of warm water
1/2 Tsp of yeast
2 Tsp of kosher salt
2 Tsp of olive oil
3 Tsp of fresh rosemary leaves

Directions:
Directions:
Mix all of the ingredients for 8-10 minutes, or until it is smooth and elastic. Divide the dough into 1 lb loaves and roll out to fit the pan. (about 3 loaves) Place in oiled flat pan (81/2x12x1 1/2) Cover and let rise ( 2 - 2 1/2 hours) brush with olive oil and press holes in the top evenly with fingers. Sprinkle with rosemary. bake in a 475º oven for 13-15 minutes or until nicely browned.
