1 lb. fresh green beans
4 cups torn leaf lettuce
1 can hearts of palm, drained & sliced
1/2 cup sliced celery
1/2 cup pimento stuffed olives
1/2 cup fresh chopped parsley
2 tomatoes sliced & quartered
vinaigrette dressing

Directions:
Wash, trim and string beans. Steam in basket over boiling water 10 minutes. Cool. Combine green beans and lettuce, hearts of palm, celery, olives, and parsley in a large bowl. Garnish with tomatoes. Toss with vinagarette.

Dressing: 1/3 cup vegetable oil, 1/4 cup cider vinegar, 1/2 cup fiinely choppped green onions, 1/4 cup sweet pickle relish, 1 tablespooon sugar, 1 tablespoon chopped fresh basil, 1 tablespoon chopped pimento, 2 tablespoons tarragon vinegar, 1/2 teasoon dijon mustard, 1/4 teaspoon salt, 1/8 teaspoon pepper. Combine all ingredients. Stir well. Chill 3 to 4 hours.
