6 Tablespoons salt
3/4 cup sugar
1 quart water
4 split chicken breast
Spice Mix: 2 T. each of ground cumin, curry powder, chili powder, 1 T. each of allspice and black pepper, 1 t. cinnamon. Mix in bowl.

In gallon ziplock bag, dissolve salt and sugar in water. Add chicken and reseal. Refrigerate about 1 1/2 hours. Remove from brine, rinse and pat dry.

Rub chicken with spice mix.

Place chicken (skin side down) on rack of grill. Grill 3 minutes per side. Move chicken to low or no fire area of grill and place skin side up. Cover with foil pan. Grill 10 minutes. Turn and recover and cook 5 minutes more or until chicken breast is 160º.
