1 tablespoon sugar
3 tablespoons water
2 tablespoons soy sauce
oil
salmon fillets

Directions:
Directions:
Mix water, sugar and soy sauce. Marinate fillets for about 30 minutues at room temperature. Drain fillets.

In a heavy skillet heat 1 1/2 tsp. oil until pan is hot. Place salmon skin side down and cook 4 1/2 minutes. turn salmon cook another 4 1/2 minutes. Remove fish to hot plate. Put marinade in pan and boil quickly until it thickens. Pour over fish.

DO NOT OVERCOOK! 4 to 5 minutes per side is good for center cut salmon fillet.
