2 tablespoons olive oil
1/2 cup chopped onion
1 clove garlic, chopped
1 - 28 oz. can plum tomatoes w/juice
1/2 cup vodka
1/8 t. crushed dried red pepper flakes
1/2 cup heavy cream @ room temperature
salt
12 ozs. dried fettucine or penne pasta
2 T. chopped parsley
Parmesan cheese

Directions:
Directions:
Heat oil in a medium sillet; add onion, saute until tender but not brown, about 5 minutes, stir in garlic; saute 1 minute. Add the tomatoes, vodka, and red pepper, stirring to break up tomatoes with the side of the spoon. Simmer until sauce is reduced and thickened about 15 minutes. Stir in cream; simmer, stirring until sauce is thickened slightly, about 5 minutes. Season with salt. Cook pasta in salted water. Toss fettucine or penne with sauce and garnish with chopped parsley and fresh grated parmesan.
