4 Fish Filets (Any white flaky fish will be fine)
3 Lemons
2T Butter, soft at room temperature
2T Fresh dill
(If you don't like dill substitute fresh parsley)
3 Cups of cold cooked white rice
(I like to use left over Jasmine rice)
Olive Oil
Garlic Powder
Crushed Red Pepper
Salt
Fresh Ground Pepper

Directions:
Preheat the oven to 350º. Butter a deep baking dish, one that's big enough to hold all of the rice.
In a bowl, combine the cooked rice with 3T of olive oil, the juice of one lemon, salt, pepper, crushed red pepper, and garlic powder. Use amounts that suit your tastes. Once the rice is evenly seasoned, pour it into the buttered baking dish. (If you are using dry left over rice, sprinkle about 1/4 cup of water over the rice.)
Next slice the remaining two lemons as thinly as possible. Make a layer of the lemons on top of the rice. On top of the lemons add the finely chopped fresh dill or parsley. Rub the fish filets with the softened butter and season with salt, pepper, and crushed red pepper. Place the filets on top of the rice and lemons. Cover the dish with a lid or foil and bake until the fish is cooked how you like it. (Cooking times will vary depending on the fish you use.) The last minute or two remove the lid or foil and broil the top of the fish. Serve hot with a side salad or steamed broccoli.

The ingredients in this recipe may appear to be slightly different than the 'traditional' meatloaf. Trust me, this will be the most delicious meatloaf you have ever tasted.
