1 c. vegetable oil ;
1/3 c. white vinegar ;
1/4 c. minced fresh Italian parsley ;
3 T. minced fresh basil ;
1 T. sugar ;
1 tsp sea salt ;
3-4 grinds fresh pepper ;
1/2 tsp ground mustard ;
1/2 tsp garlic powder ;
1 med. sweet onion, see note below ;
6 large tomatoes, thinly sliced.

In a small bowl or a jar with a tight-fitting lid, mix first nine ingredients. NOTE: After peeling onion, cut in half (top to bottom) and rinse under cold running water. Slice onion thin and layer onion and tomatoes sliced a bit thicker in a shallow serving dish. Shake or stir dressing and drizzle over the vegetables and add a couple more grinds pepper; cover and refrigerate for several hours.
Serve cold.

Fresh garden tomatoes are a treat at a picnic or family gathering. The zesty flavor of this dish is a pleaser, and it’s a colorful addition to the buffet. I’m grateful to the friend who gave me the recipe. Her family has grown tomatoes by the acre on their farm for years.
