1 yellow cake mix
1/3 cup sugar
1/3 cup oil
3 eggs
1 15 oz can of pumpkin
3 tsp pumpkin pie spice




Directions:
Directions:
Heat oven to 325 F. Grease loaf pan. Combine sugar, oil, eggs, and pumpkin. Mix on high speed for 1 minute. Add cake mix and spice. Mix on high speed for 2 minutes. Pour into pan. Bake for 50-60 min. or until knife comes out clean. Cool and serve. Note: Loaf pans come in various sizes. Only fill your pan 3/4 full. If you still have batter left over, make muffins to enjoy while the bread is cooling!

I have never been much of a baker and rarely have every thing on hand for spur of the moment cooking. This recipe is the result of a hankering for pumpkin bread with only a boxed cake in the pantry. It turned out pretty good and I hope you enjoy it.
