Carrot Bran Muffins Recipe

1 1/2 cups flour
3/4 cup packed brown sugar
3/4 cup natural bran
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 eggs
1/2 cup cooking oil
1 cup grated carrot
1 cup crushed pineapple and juice

Combine dry ingredients in large bowl. Mix and make well in center. Mix in beaten eggs, oil, carrots, pineapple and juice, and stir to moisten. Batter will be lumpy. Fill greased muffin tins 3/4 full and bake in 400 oven 20-25 minutes.
