Spinach Salad With Bacon & Apple Recipe

1/4 c. vegetable oil (not olive oil)
3 tbsp. tarragon wine vinegar
1/8 tsp. salt
fresh pepper to taste
1 tsp. sugar
1/2 tsp. dry mustard
1 lb. fresh baby spinach
5 slices bacon
1/3 c. sliced almonds
1 red apple, sliced
3 green onions, including some greens thinly sliced

Combine oil, vinegar, salt, pepper, sugar & mustard. Set aside. Drain and thoroughly chill spinach. Saute bacon in skillet, remove and drain on paper towels. Discard all but 1 tbsp. drippings. Add almonds and stir over medium heat until browned. Remove and rain on paper towels. Place spinach in salad bowl, add green onions, apple slices and almonds. Crumble bacon on top when ready to serve. Spoon dressing over salad.
