2 lb. bag frozen hash browns - thawed
1 c. chopped onion
3 c. shredded cheddar cheese
1 small container sour cream
1 can cream of chicken soup
salt and pepper to taste
1 sleeve Ritz crackers
1 stick butter or margarine

Directions:
Directions:
Grease 9 x 13" baking dish. Mix together hash browns, onions, sour cream, cream of chicken soup, 2 cups of the shredded cheese and salt and pepper. Put into baking dish. Put crackers into a large baggie. With a rolling pin, crush crackers until they are crumbs. Melt butter and pour into baggie with the crumbs. Mix well and put crumb topping over the hash brown mixture. Sprinkle with remaining cheddar cheese. Bake at 350º for approximately 1 hour. The casserole should be golden brown.
