1/2 c. olive oil
2 c. peperoncini (quartered and seeds removed)
4 pork chops
1/2 tsp. salt
1/4 tsp. pepper
4 tbl. vinegar brine reserved from peppers

Directions:
Preheat oven to 450º. In large oven ready frying pan, heat oil over medium high heat. Drain peppers, reserving brine. Blot peppers on a paper towel, then add to hot oil and fry, turning once, until just golden brown. Remove peppers; drain on paper towels. Rub pork chops with salt and pepper, then add to frying pan over medium high heat and brown on both sides, turning chops only once. Remove from heat, sprinkle vinegar brine over pork chops, and cook in oven 10 minutes or until center of meat reaches 150 to 160 º. Arrange peppers over chops and serve.
