2 chicken breasts, skinned, boned, and halved
1/2 cup mayonnaise
4 tsp white wine vinegar
4 tsp dijon mustard
1 small chopped garlic clove
2 tbsp olive oil
1/2 cup dry white wine or sherry
14 oz can artichoke hearts, drained and quartered

Directions:
Preheat oven to 350 F. In a large skillet, heat olive oil and brown chicken well on both sides. Add wine and cover; simmer at least 15 minutes. Meanwhile, mix together mayo, artichokes, dijon mustard, and garlic; set aside. Remove chicken from heat, add mayo mixture to skillet and simmer 2 min. Arrange chicken in an oven-proof dish, pour artichoke mix over chicken. Bake at 350º F for 25-30 min. Serve over rice.
