Ingredients: Pastry for a Single-crust pie. 1 cup sugar 1/2 cup all-purpose flour or 1/4 cup cornstarch 1/4 teaspoon salt 3 cups milk 4 egg yolks 3 tablespoons butter or margarine 1-1/2 teaspoon vanilla 4 egg whites 1 teaspoon vanilla 1/2 teaspoon cream of tartar 1/2 cup sugar

Directions:Prepare pastry; it into a 9 inch pie plate. Flute edges and prick pastry. bake in 450 degree oven for 10 to 12 minutes or until golden brown. In a saucepan combine the sugar, the flour or cornstarch and salt. Gradually stir in milk. Cook and stir until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat. Beat yolks slightly. Stir in 1 cup of the hot mixture. Return mixture to pan; cook and stir 2 minutes more. Stir in butter and the 1-1/2 teaspoons vanilla. Pour hot mixture into cooled pastry. To make meringue, beat egg whites with the 1 teaspoons vanilla and the cream of tartar til soft peaks form. Gradually ad the 1/2 cup sugar, beating to stiff peaks. Spread over hot filling; seal to edges. Bake in 350 degree oven for 12 to 15 minutes or until golden. Cool; refrigerate. Chocolate Cream Pie Prepare Vanilla Cream Pie as directed above except increase sugar to 1-1/4 cups. Chop 3 squares (3 ounces) unsweetened chocolate; add to filling along with milk |
