1 1/2 pds. small red potatoes
2-3 Tbsp. vegetable oil
1 c. shredded Monterey Jack Cheese
1/2 c. sour cream
1 pkg. cream cheese, softened
1/3 c. minced green onions
1 tsp. dried basil
1 garlic clove, minced
1/2 tsp salt
1/4 to 1/2 tsp. pepper
1/2 pds. sliced bacon, cooked and crumbled

Pierce potatoes; rub skins w/ oil. Place in baking pan. Bake uncovered at 400º for 50 minutes or until tender. Allow to cool to the touch. In mixing bowl, combine Monterey Jack cheese, sour cream, cream cheese, onions, basil, garlic, salt and pepper. Cut potatoes in half; carefully remove pulp; leaving a thin shell. Add pulp to cheese mixture & mash; stir in bacon. Stuff potato shells. Broil 7-8 minutes or until heated through.
