4 c. silken or soft tofu, drained ;
2 c. of peaches, pitted and chopped ;
1 c. apple juice, chilled ;
1/2 banana, peeled ;
juice of 1 lime ;
6 sprigs fresh mint, washed.

NOTE: To get more juice from any citrus (including your lime), roll it hard back-and-forth on countertop under the heel of your hand.
Place tofu, peaches, apple juice, banana and lime juice in blender and process for about 10 seconds. Serve immediately in tall frosted glasses garnished with mint sprigs.
