6-8 labs of beef Shanks or Brisket
Water to cover
1-2 Tsp of salt

Spinach
2 cups of frozen chopped spinach
2 onions chopped
1 cup of bread crumbs
1/2 stick of butter
1 1/2 cups of beef froth from above boiled beef

Fried Potatoes
6-8 Potatoes peeled and sliced
2 Tsp of lard or Crisco
Salt and pepper to taste

Directions:
place beef in a heavy dutch oven or kettle and cover with water. Add the salt and bring to a boil. Reduce heat to simmer the beef for about 5 hour or until beef is very tender. let the broth reduce as the beef is cooking to about a third. Remove the meat to a hot platter and keep warm.
reserve the broth for the spinach.

Saute onions in butter until the onions are tender, add the bread crumbs and continue to saute until bread crumbs are brown. Combine with the spinach and add the beef broth stir until it is well blended and then cook over low heat until spinach is done.

Heat the fat in a large iron skillet and place washed, peeled and sliced potatoes in hot fat. I always wash the sliced potatoes and then lay them out on a clean tea towel to drain as much of the water off of them as possible, before frying them. Once you have them in the pan salt and pepper to taste. cook over medium heat until the potatoes are brown, turn and cook the same on the other side.
Serve the beef sliced and spinach with fried potatoes and large slices of homemade bread.
