8-10 med potatoes
1 large onion
1 knorr beef bouillon cube
1/2 cup of boiling water
1- 1 1/2 cup of mayonnaise
1/2 cup of unsweetened whipping cream (whipped)
2 lemons juiced
1 tsp of black pepper

Directions:
Directions:
Wash and boil the potatoes with the jackets on, drain and peel as hot as you can. I use an oven-mit to hold them while I peel them. Cut the potatoes into chunks into a large bowl. Add the chopped onion and place the bullion cube in the 1/2 cup of boiling water and dissolve. Pour over the potatoes and onions and let stand for about 15 minutes. Stir in mayonnaise (enough to moisten the potatoes) Add the lemon juice and fold in the whipped cream. Add more mayonnaise if needed. Add the pepper and you can taste for salt.
