2 cups sugar
1/2 cup corn syrup
1/2 cup water
Pinch of cream of tarter
3/4 teaspoon peppermint extract
1 teaspoon red food coloring

Directions:
Directions:
Combine sugar, corn syrup, water, and cream of tarter; stir until sugar dissolves. Cook without stirring to very hard-ball stage (265º).
Remove from heat and add peppermint extract. Divide in two portions, add coloring to one part. Pour out on greased platters. When cool enough to handle, pull each part separately. Form in ropes and twist red part around white. Work rapidly to finish before it hardens. Cut in eight-inch lengths and form in the shape of candy canes.
