2 lb. yellow squash
small onion
1/2 stick butter
1c. grated sharp cheddar cheese
1/2 cup mayonnaise
1 egg
1/2 stack Ritz crackers, crushed
salt & pepper

Directions:
Directions:
Cook squash with onion until tender. Drain. Add butter,
mayonnaise, cheese, and salt & pepper to taste. Add about 1/2
c. cracker crumbs to mixture. Place in buttered casserole and
add rest of cracker crumbs to top. Dot with butter. Bake at 350º
for 30-35 minutes.
