1 1/2 qts cooked chopped beets or 4 (15oz) cans

1 1/2 qts raw chopped cabbage
1 c chopped onion
1 c cider vinegar
2 c sugar
1 T salt
1 t pepper

Directions:
Directions:
Mix vinegar, sugar, salt and pepper. Bring to a boil. Pour over vegetables and boil for 5 min. Store in refrigerator to crisp in a covered container.
