1 Whole stewing hen
1 Bay leaf
1 chicken bouillon cube
1 small onion chopped
2 carrots peeled and sliced
2 tsp of garlic salt
1/2 tsp of celery salt
1/2 tsp of pepper

Dumplings

6 eggs beaten
1 tsp of salt
2 cups of flour / more or less

Directions:
Wash and cut up hen to fit in a large soup kettle. Add the onion, carrot and seasonings and boil until the chicken is fork tender. This will take several hours. Remove the chicken to a platter to cool. when it is cool remove meat, and cut into bite size pieces. Reserve broth.

Dumplings

Beat the eggs and add the salt. Start adding enough flour to make a medium soft dough. ( it will be about like cookie dough) You will want it stiff enough to hold together in the boiling broth. Drop by teaspoonful into the boiling chicken broth. When you get all of the dumpling dropped, reduce heat and simmer for about 10- 15 minutes. They will all float to the top. Add your chicken. Mom would sometime add a Tsp of chopped parsley

This is a great winter dish. Mom would always have a big bowl of mashed potatoes and homemade bread to go along with this dish.
