1 cup raisins
1 cup dates
3 cups cold water
4 tsp. shortening
1 cup brown sugar
1 cup white sugar
3 eggs
2 tsp vanilla
1 cup nuts
5 1/3 cups sifted flour
1 cup bread flour
4 tsp. baking soda
1 tsp. salt

Bring raisins, dates and cold water to a boil; cool and set aside. In large bowl, stir together bread flour, whole wheat flour, cornmeal, baking soda. Cream shortening, sugar and eggs. Add date mixture. Mix all dry ingredients and add to first mixture. Add nuts. Pour batter into four greased and floured coffee cans, filled about 1/2 full. Bake at 300-325 for 45-60 minutes, until loaves are set. Remove immediately from cans and place in foil. Roll tightly do each loaf can steam.
