3 T. olive oil
1 lb. baby red potatoes
1 clove garlic, crushed
1 tsp. coarse salt
1 T. fresh rosemary, chopped
1 T. thyme

Directions:
Directions:
Wash, but do not peel baby red potatoes and place into a heavy medium frying pan with 3 T. of olive oil. Cook for 25 minutes on low heat, occasionally rolling the pan to evenly brown the potatoes. Now add crushed garlic, salt and fresh herbs (if fresh herbs are not available, substitute 1 tsp. each of dried). Cover pan and cook until done, about 10 minutes more. Served with grilled or roasted meats and poultry.
