Grilled Peaches with Amaretto Recipe

8 ripe peaches
1 vanilla pod
2 T. sugar
4 fl. oz. Amaretto
creme fraiche or mascarpone cheese to serve

Directions:
Preheat oven to 375º F. Preheat grill or grill pan. Thinly slice the vanilla pod lengthways and put into a mortar with the sugar. Pound with the pestle until broken up and combined.

Slice peaches in half and remove stones, trying to keep the cut as clean as possible. Carefully place peach halves on grill, cut side down, and grill until each peach half has become slightly charred.

Place the peach halves face up in a shallow ovenproof baking dish. Scatter the vanilla sugar over the peaches and pour in some of the Amaretto. Place in the preheated oven and bake for 10 min. or until the peaches are soft. Pour the remaining Amaretto over the peaches and serve hot or cold with creme fraiche or mascarpone.
