3 eggs
2 cup sugar
3 teaspoons salt
1 teaspoon soda
1/2 cup nuts (optional)
2/3 cup oil
2 cups peeled and grated zucchini
2 cups flour
1 teaspoon cinnamon
4 teaspoons baking powder
3 teaspoons vanilla

Directions:

Beat eggs lightly; add oil, sugar, zucchini, and vanilla. Add flour, salt, cinnamon, soda, and baking powder. Bake in 2 bread pans for 1 hour at 325 degrees.
