1 1/2 pounds lean boneless round steak
2 c cubed unpeeled baking potatoes
1 1/2 c chopped onion
1 1/2 c sliced carrots
1/2 c thinly sliced celery
1/2 c sliced parsnip
2 1/2 tbsp canned chopped green chiles, drained
1/2 tsp salt
1/8 tsp pepper
1 clove garlic, minced
1/2 c water
2 5 1/2 oz can no salt vegetable juice cocktail
2 tbsp quick cooking tapioca, uncooked

Directions:
Directions:
Trim fat from steak; cut steak into 1 inch cubes. Comine steak and next 9 ingredients in a large Dutch oven. Combine water, juice and tapioca; stir well, and let stand 5 minutes. Add juice mixture to pan. Cover and bake at 300º for 2 1/2 hours.
