2 pounds beef cut in 1 to 1/2 inch cubes
2 medium onions, cut in eights crosswis
4 medium carrots, cut in half and crosswise lengths
3 stalk celery cut in diagonal pieces
1 c tomato juice
1/4 c quick cooking tapioca
1 tbsp sugar
1 tbsp salt
1/4 tsp pepper
1/2 tsp basil
2 medium potatoes, cut 1/4 inch thick slices

Directions:
Directions:
Combine beef, onion, celery, carrots, tomato juice, tapioca, sugar, salt, pepper and basil in 2 1/2 quart casserole. Cover and cook in slow oven (300º) 2 1/2 hours. Mix potatoes into stew and cook uncovered one hour longer. Stir occasionally. If gravy becomes too thick, thin with bouillon.
