1/4 c butter
1/4 c flour
1 c milk,
4 egg yolks, beaten
1/4 pound cheddar cheese
1 7oz can corned beef, finely chopped
6 egg whites, stiffly beaten
salt and pepper
1/4 c grated Parmesan cheese.

Directions:
Directions:
Melt butter and blend in flour. Gradually add milk and cook, stirring, until thickened. Add egg yolks and blend well. Stir in cheese and beef. Fold in egg whites carefully, but thoroughly. Season with salt and pepper. Put in buttered 2 quart casserole and sprinkle with Parmesan cheese. Bake at 350º for 50 minutes, or until puffed and firm.
