1 cucumber, long English seedless, or 4 smaller cucumbers
2 cups plain yoghurt
1-1/2 tsps. white vinegar
1 tsp. olive oil
1-1/2 tsps. fresh mint
1 tsp. fresh dill
1 tsp. salt

Directions:
Peel cucumber, slice lengthways. Scoop out seeds if there are any and discard. Grate cucumber coarsely. There should be about 1 1/2 cups. Place yoghurt in a bowl, stir with a large spoon until smooth. Gently mix in cucumber, vinegar, oil, herbs and salt. Adjust seasoning, refrigerate for several hours until chilled. Serve in cold soup plates. Great for hot weather dining!
