1 12 oz. package of hot sausage
1/2 c. onion, diced
1 or 2 medium potatoes, peeled and diced
1 c. grated cheddar cheese
8 to 10 eggs, beaten
Salt and pepper, to taste
Directions:
Directions:
Cook sausage in lg. skillet until brown. Add onion and potatoes and salt and pepper. Cook over medium heat for 20 minutes, stirring occasionally. When potatoes are done, add egg mixture. Cook until eggs are done. Sprinkle cheese on top. Cover pan until cheese is melted. Prepare your tortillas, add sausage and egg mixture and enjoy!
