Place 1 cup flour, 1/3 tsp salt, 3 eggs, 1 1/2 cup milk in blender and blend about 15 seconds or until well mixed. I use an iron 9 inch chefs skillet (sloped sides) for these. Heat pan, pour 1/4 cup of batter on to the butter in center of pan. Lift and tilt with circular motion to quickly spread and thin the batter, building up the outer edges before batter thickens. Turn once. If pancakes stick where the batter lands first, use a spoon to deflect the direct hit. It will still spread evenly in a circle with tilting. If using a larger skillet, pour 1 in middle, no tilting. Hold in covered warm place or fill, roll, and serve as they come off the stove.

Besides your favorite syrup or melted jam, try heating in a small pan or cup in microwave, a mixture of 2 tbls honey, 2 tbls frozen orange juice concentrate, and 1 tbls butter. A little goes a long ways. Serves: 4 Prep: 30 min.
