1 9" unbaked pie crust
1 tsp. unsalted butter
1 small yellow onion, chopped
2 cups shredded cheddar cheese
6 slices bacon, cooked & crumbled
2 tbsp. all-purpose flour
3 large eggs
1 cup low-fat milt
1/4 tsp. salt, or to taste
1/8 tsp. ground nutmeg

Heat oven to 400º. In 6 inch non-stick skillet melt butter over moderately high heat. Add the onion and saute for 5 minutes or until soft, then transfer to a medium size bowl. Toss with the cheese, bacon and flour. Spread in pie crust. In the same bowl whisk the eggs with the milk, salt and nutmeg. Pour over pie mixture and bake, uncovered, for 35 minutes or until center is set.
