Red Snapper or other fish
1/2 c mayonnaise
1 tbsp curry powder
1 c bread crumbs
2 tbsp oil

Directions:
Directions:
My husband Esco used Red Snapper for this, but you can use any fish. Mix mayonnaise and curry, dip fish in mayonnaise, then roll in bread crumbs. Fry in oil for a few minutes, depending on type and size of fish.

Esco grew up in Liberty Valley (Grandson of Elijah Osmon, son of Edgar) and was a hunter and fisherman his whole life. During the 30's depression he worked across country with CCC projects. We married, moved to Oregon, and worked in the ship yards during WWII. Esco became a machinist and machined the first Leatherman Tool. And yes, we do spell Osmon with an "A". (Esco Osman 1916-97)
