4 medium potatoes (about l 1/2 pounds), thinly sliced
3 tablespoons olive or vegetable oil
1/2 teaspoon salt
3 cloves garlic, finely chopped
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley

Directions:
Directions:
Heat oven to 400°. Generously grease pie plate, 10 x l'/2 inches. Arrange potato slices, overlapping, in circles in pie plate. Mix oil, salt and garlic; spoon evenly over potatoes. Cover with aluminum foil and bake about 40 minutes or until potatoes are tender. Sprinkle with cheese and parsley. Cover and let stand 5 minutes. Carefully remove from pie plate. Reposition potatoes and garnish with tomato wedges if desired.
