1/2 lb. bulk pork sausage or Italian sausage (casings removed)
1/4 tsp. dried oregano
1/4 tsp. pepper
1 (8 oz.) can crushed pineapple, drained
4 English muffins
1 (6 oz.) can tomato paste
2 c. shredded cheddar cheese (1/2 lb.)
1/2 c. shredded parmesan cheese

Directions:

1. In a 10-12" skillet over high heat, crumble sausage with a spoon. Add oregano and pepper and stir until meat is lightly browned (5-7 min). Spoon out and discard fat. Add pineapple and mix.

2. Split English muffins in half, horizontally. Spread tomato paste equally on cut sides and set halves slightly apart in a 10x15 baking pan. Top each half equally with sausage mixture, cheddar cheese, then parmesan cheese.

3. Bake @ 400º until cheddar cheese is melted (about 10 min)
