1 c. blueberries;
1 c. red wine vinegar;
1/4 c. olive oil;
1 large sprig fresh thyme;
1 bay leaf.

1. Bring all of the ingredients to a boil in a saucepan.
2. Remove from heat and let stand for 1 hour.
3. Store in a bottle and refrigerate for up to 2 weeks. Use for marinating chicken, quail, squab or Cornish hens.

When the beautiful blueberries are in season this marinade can be made anywhere. If you're not going to use this flavorful vinegar as a marinade you can also use it as you would any other vinegar for a salad or however the spirit moves you. (Maybe a little dab behind each ear if you'd like.)
