4 eggs
1//2 cup orange juice
1 teapoon vanilla extract
1 1/4 cup milk
1 1/2 cups unbleached white flour
1/2 cup whole-wheat pastry flour
1 teaspoon baking flour
1/4 teaspoon salt

1 pint blueberries, strawberries or 2 bananas (sliced)

Separate egg yolks and egg whites into separate bowls. Beat
egg whites on high speed about 2 minutes until firm.
Mix egg yolks with a fork. Add the orange juice, vanilla extract
until foamy. Slowly add the milk and stir slightly.
Slowly stir and blend all dry ingredients with the egg yolk
mixture. Slowly fold egg whites. Heat skillet with 1 teaspoon
butter and pour 4 small pancakes. Cook about 2 minutes on
each side. Top with fruit and syrup.
