2 garlic cloves, crushed
1 large onion
2 diced tomatoes (or a can or two of tomatoes)
2 cans black beans, rinsed
2 c. sliced carrots
1 lb. taco chicken
1 16 oz bag frozen corn
2-4 c. water
tortilla chips, sour cream and shredded cheese to garnish

Directions:
Directions:
Saute onion and garlic cloves in a little oil.Add tomatoes, water and carrots and cook until the carrots start to soften a bit. Add everything else and cook until it's heated and the flavors have blended. Top with crushed chips, sour cream and shredded cheese.
