2 Lbs eggplant
1 cup yellow cornmeal
2-5 cloves crushed garlic
1 cup old fashion oatmeal
1 large onion minced
2 cups shredded wheat cereal - crushed (1 cup after crushed)
1/4 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Directions:

Peel and finely chop eggplant, (or grate in food processor). Place eggplant, garlic and onion in non stick skillet, cover and cook over medium-low heat for ~ 10 minutes or until soft. (Stir occasionally, add a little water if it starts to stick.) Allow mixture to cool.
Combine cornmeal, oatmeal, and crushed shredded wheat. Stir in eggplant mixture and spices; mix thoroughly. Make into 8 patties. Cook in skillet until browned on both sides and firm to touch. ~ 20 minutes
