1 can pinto beans
1 can black-eyed peas
1 can shoepeg corn

Drain and rinse the above.

Add 3 different colored bell peppers, chopped finely (red, orange, yellow, green)
1/2 red onion, chopped finely

Dressing:

1/2 c. sugar
1/2 c. apple cider vinegar
1/2 c. olive oil

Bring dressing ingredients to a boil or microwave until sugar is dissolved.

Pour dressing over bean mixture. Let stand 3-4 hours. Serve with scooper chips.
