Zucchinin Bread Recipe

3 eggs
2 c. sugar
1 c. vegetable oil
1 T. vanilla
2 c. packed grated zucchini, drained
1 tsp. salt
1/2 tsp. baking soda
1 T. cinnamon
1 c. plain flour
1 c. whole wheat flour
1 1/2 c. powdered sugar
juice from one lemon
finely-grated zest from one lemon (optional)

Beat together eggs, sugar, oil and vanilla. Mix in zucchini, salt, baking soda, cinnamon and flours. Pour into two greased and floured bread loaf pans.

Bake 40 to 50 min at 350 F. Cool 1/2 hour and glaze with mixture of powdered sugar and lemon juice.
